When I've made soft drinks, I've made them in reused plastic soft drink
bottles. As soon as the carbonation is strong enough that the bottles
don't yield when you squeeze them, I put them in the refrigerator to stop
fermentation. That's usually in the neighborhood of 12 hours or so, but it
depends on how much sugar and yeast is in the recipe and the temperature.

If you're bottling in glass bottles, it's a good idea to find one 12 ounce
plastic soft drink bottle to fill alongside the glass bottles. That way
you can use it to find out when the rest of the batch is ready. Don't use
plastic bottles for regular water because they aren't strong enough. You
need to use soft drink or carbonated water bottles.
