So I picked up a few lbs of pepper flower honey and was wondering if anyone
has used this for beers and meads? The original source has about 8000 lbs
of it and nobody wants it for regular honey needs. I see an opportunity to
get into mead making and such..

I'd say you stumbled onto a gold mine! Sounds like you've got lots to
experiment with. Your source wouldn't happen to live in the Baltimore
area, would he?

I'd say you stumbled onto a gold mine! Sounds like you've got lots to experiment with. Your source
wouldn't happen to live in the Baltimore area, would he?
Not sure.. I'll have to check with my beekeeper friend who scored this stuff.
The guy can't seem to sell it to usual honey buyers since its a bit different.
To me its richer, almost malty. To my wife its too sweet.

So I brewed an amber ale with 2lbs of the honey added at flame-out. I'm giving
it 2 weeks to ferment, as honey seem to slow it down a bit. Hope its not going
to taste off..

Dan, from my limited beer/honey brewing experience, I have found that
honey doesn't add a huge flavour component to anything other than the
lightest style of beers. I find the typical beer components (malt/hops)
overwhelm whatever honey contributes, especially 1kg of honey in what I
am assuming is ~20 litre wort. However I am unfamiliar with Pepper
flower honey.
Mead on the other hand......

I just kegged this batch and found it did have a decent honey flavor to it.
This is a different kind of honey, stronger kind of flavor. Seems sweeter
than usual wildflower honey. Hoping that carbonation will counter some of
the residual sweetness.
