I'm going to be brewing soon a porter fairly close to the Fullers porter
recipe here:

For the fun of it, I want to reserve about a six or twelve pack worth of it
and add stuff to it as a secondary fermentation, with the main part of it
used in a straight-up fashion. I have on hand vanilla, oak chips, peated
malt, spices and I have a homebrew store nearby so I can get other stuff
too.

Any favorites? The goal is to do something interesting with the smaller
sample, since 3/4 to 7/8 of it will be reserved for the standard recipe.
I'm happy to hear about anything someone's done -- blueberry jam, smoked
ancho chilis, garam masala....

I added toasted coconut, and vanilla to my last batch. Toast some ( I used
~1 lbs for a 5 gallon batch) coconut flakes for 15-20 minutes in the oven
(keep an eye on this, it'll burn quickly). Add to secondary with a vanilla
bean or two.

My sister would fight anyone for the last glass of this - she loved
it, and basically requires it to be on tap whenver in town. I liked it,
but in limited portions. 5 gallons was too much. I'd think your
6-12 bottles would be perfect. The Fuller recipe looks close enough
to what I recall that I used. I think it'd work.

Vanilla-Coconut sounds awesome, I hadn't thought of that. I have some
homemade vanilla extract, so that sounds like a great option for a fraction
of the batch I'm making.

I like Bourbon and I like porter but I'm not a fan of them mixed. I
like vanilla in stouts in I think I'll try out a sixer of vanilla
coconut.
