I'm planning to do the Asian Delght Ale that appears in the Jan-Feb
issue of BYO. The recipe ask for rice syrup solid. I know what is rice
syrup and I know what is flaked rice. But what is this rice syrup solid
??? Is it a syrup (like LME) or is it a solid (like DME) ? Could it be
a mistake in the recipe ?

If I have flaked rice, could I simply mash this flaked rice with some
6-rows malt in a partial mash instead of using this rice syrup solid ?
I've looked at my LHBS and to my usual online stores but only have
found flaked rice and no syrup in whatever form, liquid or solid... So,
for me, it would be more practical if I could use flaked rice instead
of the syrup solid.

It is a powder like DME, but it is more akin to maltodextrin powder
than it is to DME.

Basically when they make grain syrups they chemically treat the grains
with a strong acid (sulfuric) to break down the starches. they then
refine that into syrups (highly fermentable sugars) and solids (less
fermentable maltodextrines). there is also an enzyme based process
which produces high fructose corn syrup (with resulting
maltodextrines).

i would not try and substitute flaked rice, because it is a totally
different animal. if anything I would subsitute maltodextrine powder
derived from corn and corn sugar. it is there to basically lighten the
body and dry the beer out. If you use just corn sugar it would end up
too dry and thin...so that is why the maltodextrine is there.
